This week I’m sharing my Carrot Cake recipe and the Little Man was my helper.

Carrot Cake
This is a very simple carrot cake which contains no nuts or extra flavourings, just carrots and a little cinnamon.
You can cover it with a cream cheese frosting, or butter cream, but we like it as it is.
Ingredients:
185g sugar
180 ml vegetable oil
2 eggs
150g self raising flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
130g carrots grated (about 3 medium carrots)
Method:
mix together the sugar oil and eggs in a large bowl.
Sift in the flour baking powder, salt and cinnamon
Add the grated carrots
mix well
bake for 50 minutes at gas mark 5

I adore carrot cake but have never before made it myself. Little man looks like he's having lots of fun. I don't have access to my laptop this week but will see if I can manage to link up an old post through my phone in a moment. Xxx

Yummm we love carrot cake but I've never been brave enough to make it, I'm not really sure why as this recipe looks so straight forward!

Awww son and i baked but I forgot to take photos! We usually just do cookies and would probably try bread and cakes this week and I wont forget to take photos so that I can join in next week =) #pocolo
